Raw Carrot Cake Cookies


One of my friend’s moms is not feeling well, so I thought I would make her these healthy cookies to lift her spirits. This recipe is raw, gluten free, sugar free and vegan and super easy! This new banga from Stooki Sound was a nice soundtrack for my “baking” experience.

Raw Carrot Cake Cookies

1 Cup of shredded carrot
2 Cups of oat flour (I used whole oats and ground them in my vitamix)
1 Cup of cashew flour (also ground in my vitamix)
1/4 teaspoon of nutmeg
1/4 teaspoon of cinnamon
3/4 cup of agave (my dough was a bit sticky so next time I will use less agave)
1 teaspoon of real vanilla extract
1 teaspoon of fresh grated ginger (optional)

Place the carrot, oat flour, cashew flour,nutmeg, cinnamon and ginger in a large mixing bowl and stir until thoroughly mixed. Add agave and vanilla and mix until everything is blended. Form into balls and enjoy! Easy and yummy!
