Fresh Bowl with “Fish Sauce”

I have recently entered the ranks of the unemployed which for me means lots of sitting at home and eating different variations of fried potatoes while watching daytime TV. But today I told myself “GET IT TOGETHER!!!” (stern RuPual voice) and decided to make something fresh with lots of raw vegetables. This was super good and will be in my arsenal of healthy, quick and delicious meals to wow my friends.

Fresh Bowl with “Fish Sauce”

Fresh Bowl

Two bundles of udon noodles
1 jalapeno pepper (chopped)
2 carrots
1 small zucchini
2 cups of brussel sprouts
3 sprigs of green onion (chopped)
Fresh Ginger (grated)
1/2 cup of peanuts

“Fish Sauce”

2 tablespoons liquid aminos
2 tablespoons apple cider vinegar
1 teaspoon miso paste
1 tablespoon water
1/2 teaspoon agave


First cook the noodles according to package instructions. While noodles are cooking take a vegetable peeler and slice the carrot and zuchinni very finely (they should almost look like veggie noodles) and set aside.



Now chop the brussel sprouts. Steam them lightly for 3-5 minutes.

Now we will mix all of the ingredients for the sauce until everything is incorporated. Place the noodles in a bowl adding the zucchini, carrots, peanuts, onion, jalapeno and grated ginger on top. Finish with the sauce and serve!

This makes two servings.
