Banga and Mash

A month ago my good friend Mathieu (aka Surfing Leons) and I released our debut track “Banga” on Enchufada Label. Today is Saint Patrick’s Day so I thought it would be perfect to pair our song “Banga” with my vegan version of the traditional Irish meal Bangers and Mash. I used steamed Broccoli instead of peas because well that is what I had!

Vegan Bangers and Mash

2 Cups of broccoli
Package of Tofurky Kielbasa Sausage

4 Cloves of garlic chopped
1/2 Medium onion chopped
1 Tablespoons Liquid Aminos
1 Cups of veggie broth
1/2 Teaspoon cracked black pepper
1/2 Teaspoon chilli powder

6 Medium white skin potatoes
1 Cup soy milk for creamier potatoes 3/4 Cup for chunkier ones
1 Teaspoon of rosemary
1 Tablespoon of Earth Balance
3 Cup of Water 1/4 reserved
Salt to taste

Steam Broccoli lightly and set aside.

Boil Potatoes in about three cups of water until tender. Remove from water reserving 1/4 cup . Using an immersion blender or Vitamx, add potatoes to soy milk, earth balance, reserved water, rosemary and salt and blend until creamy.

Caramelize onions and garlic over medium heat. Blend together with the Liquid Aminos, veggie broth, chilli powder and pepper. Remove from blender and cook until the gravy starts to thicken up.

Cook vegan sausage according to package instructions

Place the bangers¬† on top of the mash on a plate, and pour gravy on top. In the words of Mathieu “Bon appetit”
