Mock Chicken Salad


About a month ago, my friend Ashley and I embarked on the most detail-oriented art project of my life. Since our focus was only on creating art, we lived on Whole Foods mock chicken salad which led to us…well kind of become addicted to it (trust me its the jaaaaaam) We ate it by the tub-full, because hey it was vegan…so it had to be healthy…right?? Meanwhile our pants were getting tighter and it was becoming harder and harder to sit down in our skinny jeans. When we shared our assumptions about the healthiness of mock chicken salad with some of our friends from Whole Foods they basically laughed in our faces like “You guys know it is full of vegan mayo=not healthy.” Well I decided to come up with a healthier version and asked Ashley to come over for a taste test.

Im pairing this with M.I.A.’s new MATANGI mix tape, because like mock chicken salad it is insanely addictive.

Mock Chicken Salad

One bag of Delight Soy Nuggets
3 sprigs of green onion
3 stalks of celery
1 jalapeno pepper
Handful of Italian parsley leaves
1 avocado
One half lemon
3 tablespoons of vegan mayo (I used the reduced fat kind from Trader Joes)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon chilli powder
1/2 teaspoon tajin


Cook the soy delight nuggets in the oven according to package instructions.


Finely chop the green onion, celery, jalapeno (take out the seeds if you don’t want so much heat) and parsley. Set aside.

Mash the avocado the squeeze the juice of the lemon over the mashed avocado. Mix well, then add the onion, celery and jalapeno and parsley. Mix again until the avocado covers all of the added ingredients.


Chop the cooked soy nuggets and add them to the bowl with the other ingredients. Add the vegan mayo and mix well. Mix in the salt, black pepper and chilli powder.


At this point I was like this is good but is missing something. I racked my brain and thought TAJIN!!! Have you had it before? It is a lovely spice that adds a great lime flavor to food. You can get it at most Mexican grocery stores. If you can’t find it maybe a little zest from the lemon would do the trick. I sprinkled it on and yes yumm mock chicken salad goodness!!!


Ashley tasted it and she approved!
